It’s been awhile..

So I’ve avoided certain social media websites for awhile to try and calm down anxiety being triggered regarding the whole virus/quarantine situation.  Anyway, I’m doing much better in regards to that so I feel I can come back now without being triggered.  I spent some time working through a coronavirus anxiety workbook PDF my therapist emailed to me, and it has been immensely helpful!

My birthday was last week.  My sister bought me an Xbox gift card which I used to buy the Harry Potter Lego Collection game.  I got a haircut over the weekend, much needed, it feels so much better shorter especially in the summer.

Finally got my own internet connection since the building’s main one sucks.  So now I can do my gaming and whatever without any problems.

I recently bought a crockpot and used it for the first time today.  I cooked homemade meatballs and spicy Italian sausage in sauce then put it over pasta.  It was delicious!  I’ve been looking up all kinds of different recipes on pinterest today, it’s amazing all the different things you can do with a crockpot, even desserts!  I’m getting excited about cooking again.

I’m still doing well mentally, very stable.  I’m thankful for finally getting on meds that help, and for my doctor and my support system.

Green desserts…

Trying to decide what dessert to make for St. Patrick’s Day, it’s been a looong time since I’ve posted anything food/cooking related here so I’d like to start doing that more.  I’m thinking of possibly doing those Oreo truffles dipped in white chocolate that’s dyed green.

After this weekend I’ll be completely finished with the old apartment and won’t have to keep running back and forth between the two anymore.  So excited to have that done with! It’s been stressing me out the past few weeks.

I’m going to start using Khan Academy and Duolingo again to have something to do while I save money to re-start classes at my college.  Really enjoy learning!

 

Late Night Baking

I have classes tomorrow but I decided to bake cookies because I got inspired and just felt like it. 😋🍪 I might end up having to stay up the rest of the night, don’t trust myself to wake up on time tomorrow.

Anyway, I ended up making sugar cookies with a glaze and sprinkles, I had a lot of fun making them. Cooking is so relaxing to me. Creating something that looks nice and tastes good makes me feel great. ❤️

Milky Way Pretzel Christmas Brownies

I’ve been cooking often lately and I decided I’d make something holiday themed. These are fudge brownies baked with pieces of Milky Way candy bars and mini pretzel twists inside, frosted and topped with M&Ms. Basically diabetes in a pan, but they taste amazing and are a nice treat for special occasions!

I used:

8×8″ baking pan

Betty Crocker Fudge Brownie Mix: prepare as directed, make sure to use 2 eggs as that makes them denser (they also have 3 eggs as an option which makes them more cake-like, for this I’d go with 2)

Betty Crocker Vanilla Frosting: I used half a can

Mini Milky Way candy bars: 1 cup chopped. What I did is slice pieces off, I’m sure it’d work any other way.

Mini pretzel twists: 1 cup, chopped

M&Ms: 1/2 cup sprinkled on top, I also used a handful in the batter as well

Any brands can be used and there are tons of variations that can be done with mix ins, and frosting, etc. So experiment and have fun!
